The Reverend’s Chicken Satay

As mentioned on a previous blog, I really love chicken satay. This love developed further after a trip to Thailand. Since then I have tried to recreate a good chicken satay using parts of various recipes I’ve found. Here is The Reverend’s interpretation of a quick and easy Chicken Satay to impress anyone.

Ingredients for Chicken Satay

  • Chicken Thighs. You could use breast but I like how juicy thighs are. A packet should be fine.
  • Coconut milk
  • Peanut Butter
  • A lime/Lime Juice
  • About an inch of Ginger
  • 2 Cloves of garlic
  • 1 Tbsp Soy
  • 3 Tbsp Clear Honey
  • 1 Tbsp Curry Powder
  • Skewers (not needed but can be used)

Method

  1. Grate the Ginger and add to a bowl
  2. Crush the garlic and add to the bowl
  3. Add the juice of a lime (or tip some from the bottle like I did!)
  4. Add the Soy, Honey and curry powder
  5. Add about half a can of coconut milk
  6. Mix thoroughly
  7. Mixed ingredients in bowl for Satay
  8. Cut chicken in bits
  9. Add the chicken and makes sure all the meat is covered

  11. Cover with Clingfilm
  12. Put in the fridge to marinade overnight or as long as possible
  13. Take out of fridge
  14. lift chicken out of mix and put on a grill tray(if you have skewers then put the chicken on the skewers before putting on grill)

  16. Put chicken under the grill
  17. Use a spoon to take all remaining satay sauce and put in a saucepan on the hob. (Medium Heat)
  18. Try not to let the sauce boil but it needs to be cooked through
  19. Keep turning the chicken to make sure it is cooked evenly
  20. Add coconut water to the satay sauce a tablespoon at a time to get a good consistency and colour
  21. When chicken is cooked, add to a plate and either pour the sauce over it or add to a dish on the side.
  22. Serve however you want, I enjoy mine with salad.

So there you have it. Home made chicken satay…The Reverend Style. You can mix it up quite easily – never be too scared with the flavours. Good additions are some fresh chillies chopped up finely and sprinkled on top. Or maybe some crushed peanuts. I drizzled some sauce on the salad as I love satay sauce! I really should have made an oriental salad with my dinner but I was just using up stuff I had already so mixed leaves, cucumber, peppers and spring onion. Lovely.
