Wow! This is a fun one. I am a biscuit fiend and something I love doing is baking cookies. Based on this I needed to take this to the next level and make one of my favourite biscuits, the Bourbon.
You will need a bourbon biscuit stamp if you want it to look like a real bourbon!
What You’ll Need!
- Mixing bowl
- Mixing Spoon
- Kitchen Scales
- Measuring Spoons (or just spoons!)
- Cooling Rack
- Rolling Pin
- Sieve
- Piping Bag (or use Ghetto Piping Bag)
Ingredients
- 110g Plain Flour
- 75g Icing Sugar
- 100g unsalted butter
- 35g Cocoa Powder – get the good stuff!
- 1 tbsp Golden Syrup
- 1/2 tsp Bicarb of Soda
- 50g Light Brown Soft Sugar
- 1 tbsp Golden Caster Sugar
- 2 tsp milk
- Pinch of Salt
- (optional – bourbon!)
If you do any kind of baking at home then you will probably have a mixing bowl and a mixing utensil (I’m using a pink spatula). You will also need a rolling pin. The other thing you will need is a Bourbon biscuit stamp. I have this one and I used it in this recipe.
Method
Making the biscuits
- Set oven to 150°C.
- Mix 50g of butter and the soft light brown sugar until they are creamed.
- Add the golden syrup and mix again until completely mixed in.
- Put the flour, 20g of the cocoa, salt, bicarb together in a bowl and mix.
- Sift this into the creamed sugar.
- Slowly add the milk, a bit at a time until a dough is formed. (It might not look great – a little too crumbly but don’t worry)
- Put mixture onto a floured surface and knead with your hands until it comes together.
- Roll out until it is about ¼ inch thick.
- Use Bourbon biscuit stamp to create the individual biscuits.
- Sprinkle the caster sugar over them.
- Put biscuits on baking sheet (with baking paper already on it).
- Put in Oven for 8-10 minutes. Do keep an eye on them.
- Once out of the oven, place the biscuits on a wire rack to cool.
Making the filling
- Cream together the butter, icing sugar and cocoa. Now is the time you can add the bourbon if you wish (not too much).
- Get the mixture onto the biscuits. You can use a knife to spread it or you can be like me and make a ghetto piping bag (plastic food bag with a hole in it!)
- Place a biscuit on top of the mixture.
- Try not to eat them all right away!

They look super nice, we are biscuit fiends in this house to and I have a habit of just going into the kitchen, throwing a load of things together and coming out 30 mins later with a batch of cookies…not good when you’re dieting 😉
Will have to look into getting one of those bourbon stamps.
I have a rule now (well since the start of January) to only eat biscuits I have cooked myself. Next stop – Custard Creams!
