Home Made Winter Vegetable Soup

One of my friends recently blogged about making a sweet potato soup that sounded lovely. I really wanted to try it out however I didn’t want to go out and buy any special ingredients so decided to use the veg I already had in the house. Using some larder extras I thought I’d be able to make a similar, and just a little different, general ‘winter veg’ soup version.

What You’ll Need!

Ingredients

Although I used just what I already had, you could use whatever you have. The list of what I had is as follows;-

  • 5 Carrots
  • 3 Parsnips
  • 2 Sweet Potato
  • 2 Onion
  • 3 Teaspoons Curry Powder
  • Knob of Butter
  • Large Tablespoon of Double Cream
  • Salt & Pepper to Taste

Really don’t worry about the veg you use. Regarding the other items, you can experiment but start with small amounts and you can always add to it but you can’t take away!

Method

  1. Put a large pan of water onto boilBoiling Water

  3. Wash veg

  6. Once the wateris boiling put the veg in it20160123_153116.jpg
  7. Skim off any ‘froth’ on the surface20160123_155259.jpg
  8. Boil veg until soft (use a knife to check)20160123_155009.jpg
  9. When veg is cooked, empty veg into a colander (catch water in bowl to use as veg stock)20160123_1701480.jpg
  10. Transfer veg stock from bowl to measuring jug20160123_170218.jpg
  11. Use hand blender to blitz up20160123_1703440.jpg
  12. Put kettle on
  13. Get it to a mush/mash.20160123_170434.jpg
  14. Add curry powder to a mug20160123_170927.jpg
  15. Pour boiled water into mug

  18. Blitz some more
  19. Once mixed in, pour in veg stock in small quantities20160123_171555.jpg
  20. Blitz some more
  21. Keep adding and blitzing until consistency is that of a soup20160123_171842.jpg

  24. Eat now or freeze for later.
